Busy Mom's Enchilada Casserole

To keep with the theme of easy prep and minimal cook time, this is a total play off a dish my mom used to whip up when I was a kid with a major difference... LESS STEPS! My mom's recipes calls for frying the tortillas in oil and filling them with the ingredients to make into enchiladas in addition to all the other steps, however, I admit I don't do that. Honestly, sometimes I don't even cook the meat myself (I'll explain below). My family loves this recipe! It can be made in a pinch if you are short on time! ๐Ÿคฃ 

Prep Time: 5-10mins
Cook Time: 30mins

Ingredients:
1 chopped yellow onion
1 can of Ortega Brand Chopped Mild Green Chile
2 Family Size Cream of Chicken Soup 
1 can of diced olives 
Mexican Style Shredded Cheese
Corn Tortillas
*3-4 boneless skinless chicken breasts or 2lbs of ground turkey

*If you don't want to cook the meat for the filling you can use- 
1 whole cooked chicken
 (I buy mine from Costco and this is my preferred method๐Ÿ™Œ)

For the sauce: 
1) Set your stove top to medium-high and place soup in a small pot.
2)  Add green chile to the mixture. 
4) Stir mixture until warmed throughly. 
5) Keep on low heat until ready to begin layering the casserole. 

To Cook the Meat Yourself:

Chicken Breast
1) Pre-heat oven to 350 degrees. 
2) Lightly season the chicken breasts with salt and pepper.
3) Place in a baking dish and bake for 30mins or until chicken is thoroughly cooked. 
4) Remove from oven and let cool.
5) Once cooled shred chicken, add onions, and diced olives. 

Ground Turkey
1) Set your stove top to medium-high heat. Combine ground turkey and chopped onions in a saucepan. 
2) Cook until meat is browned. 
3) Remove from stove and stir in diced olives. 

*If using a pre-cooked chicken- 
1) Remove chicken from the bone.
2) Shred chicken. 
3) Combine onions and olives.

Layering the Casserole & Baking: 
1) Spread sauce on the bottom of a casserole dish.
2) Add a layer of tortillas over the sauce overlapping them to ensure there aren't any gaps.
3) Layer meat, add sauce, and shredded cheese, as desired. 
4) Repeat steps 2-3 until you run out of filling. 
5) On the top layer, add remaining sauce and shredded cheese. 
6) Cover the casserole dish and place in the oven at 350 degrees for approximately 20-30mins for all the ingredients to combine and cheese to melt. 
6) Remove from the oven, let cool, and serve!
