Easy 3 Bean Salad

If you saw stories last week you know this recipe has been on repeat! It’s super tasty and very easy to make!

Beans are great source of fiber, vitamin B, iron, calcium, potassium, phosphorus, zinc, and much more. To help with our gut health, we have been adding this salad to our meals with some modifications to change it up to keep us from getting bored with it.

This recipe can be easily manipulated by changing the cheese, adding a different protein, and other veggies.

Instructions

Dressing Preparation
  1. Combine oil, vinegar, salt and vinegar in a bowl and whisk.
  2. Set aside.
Salad Preparation
  1. Rinse and drain all canned beans.
  2. Wash vegetables.
  3. Slice celery stalks.
  4. Quarter cucumber, remove seeds, and dice.
  5. Dice red onion.
  6. Adding feta cheese is optional, but definitely gives more flavor
  7. Place all ingredients in large bowl. pour dressing over, and mix thoroughly.
  8. Place in the fridge to chill.
  9. Enjoy!
