Busy Mom's Crockpot Vegetable Beef Soup

We absolutely love fall and winter in our household! We refer to these cold seasons as the cuddle seasons that we enjoy indulging in warm comfort foods! 

With fall approaching, a house full of sick people (myself included) this was the perfect opportunity to whip up an easy, hearty, but delicious soup to nurse us all back to health! 

What I love about this soup is its one of those meals that takes minutes to prep and cooks with little to no supervision!

Prep Time: 5-10mins
Cook Time: 6hrs

32oz low sodium vegetable broth
3.5lbs Beef Stew Meat
1/2 bag of carrot sticks, sliced
1/2lb fresh green beans, sliced
1 can diced tomato
1 small onion, diced
6 celery stalks, sliced
10-12 petite potatoes, sliced thin
*2 tbsp Dried or fresh thyme
1cup water
Garlic Salt, Pepper to taste 

*I used fresh lemon thyme 😄. You can also substitute with oregano. 

1) Add all sliced fresh vegetables, diced onion, and thyme into the crock pot
2) Combine vegetables with 1 cup of water and vegetable broth
3) Add salt and pepper to both until you achieve the desired taste
5) Gently add the beef pieces into the mixture
6) Set your crock pot to high heat set the timer to cook for 6 hours, stirring occasionally 

Once all ingredients have cooked to your satisfaction, the soup is ready to be served! 

This recipe is great with sourdough bread on the side or crackers. Our favorite carb to pair with this soup so rice.
