Chilaquiles are a traditional Mexican dish that we ate regularly when I was growing up. I remember my mom making this dish in the oven, however, my recipe is stovetop and achieved in less than 30mins!
**Side Note: You can add in bell peppers and onion if you like. My son's prefer it plain so I leave it out. 😛
Ingredients:
3 tablespoons of oil (I use grapeseed oil)

6 corn tortillas, cut into 1in squares
8eggs
Salsa
Shredded cheese
Salt, Pepper

Directions:
- Place oil in frying pan on medium/high heat. Stir in tortillas so the oil is evenly distributed over all.
- Stir tortillas regularly and continue to cook until golden brown. Once they have cooked much like a tortilla chips, you are ready to continue to the next step.
- Whisk eggs and add mixture into pan. Combine with tortillas so they are evenly distributed in the pan. Scramble until all eggs are cooked thoroughly.
- Add salsa of your choice and stir in with mixture. Mixture will combine turning the eggs the color of your salsa. I use medium salsa.
- Add salt and pepper to desired taste.
- Sprinkle shredded cheese and stir to combine.
Once cheese has melted, it is ready to be served! Enjoy!
