 We absolutely love fall and winter in our household! We refer to these cold seasons as the cuddle seasons that we enjoy indulging in warm comfort foods! 

In honor of the 1st day of fall, this is the perfect opportunity to whip up an easy, hearty, but delicious soup to warm the soul! 

What I love about this recipe is it's one of those meals that takes minutes to prep and cooks with little to no supervision so I'm bringing it back with a twist! This recipe will work in both the crockpot and a pressure cooker such as the InstaPot or Total Power Pressure Cooker (like we have)!
The only difference is the cook time!

Crockpot/Pressure Cooker Vegetable Beef Stew

Ingredients

Pressure Cooker

Instructions

General Prep
  1. Slice vegetables
  2. Dice onion
  3. Cube beef into 1-2in squares
Crock pot
  1. Add all sliced fresh vegetables, diced onion, and thyme to the crock pot
  2. Combine vegetables, vegetable broth, and water
  3. Add salt and pepper to broth until you achieve the desired taste
  4. Stir in beef
  5. Set your crock pot to high heat and set the timer to cook for 6 hours, stirring occasionally.
  6. Once cook time is complete - cool, and serve!
Pressure Cooker
  1. Add all sliced fresh vegetables, diced onion, and thyme into the crock pot
  2. Combine vegetables and broth
  3. Add salt and pepper to both until you achieve the desired taste
  4. Stir in beef
  5. Set your pressure cooker to the stew setting on medium with the timer to cook for 40mins.
  6. Once cook time is complete - cool, and serve!
